There isn’t much documented history about how National Peach Melba Day started, but the story of the dessert itself is both interesting and charming. Peach Melba was created in the late 19th century by the legendary French chef Auguste Escoffier. He was inspired by the famous Australian opera singer Nellie Melba (born Helen Mitchell), who was studying in Germany and later performed in London. After attending one of her performances, Escoffier crafted a special dessert for her: fresh peaches served over vanilla ice cream, topped with raspberry sauce and, originally, presented on an ice swan.
Nine years later, Escoffier reintroduced the dessert for the opening of the Ritz Carlton Hotel, but this time without the elaborate ice sculpture. He named it Pêche Melba, and the combination quickly became beloved around the world.
