October 17 is National Pasta Day, and October is National Pasta Month—a time to celebrate the Italian dish of pasta. The holiday was founded in 1995 by 40 pasta makers. Although Italy is often considered the capital of pasta, the dish has its origins in China with the explorer Marco Polo bringing it back in the 1200s. Pasta gained popularity in the 14th and 15th centuries due to its ease of storage and was taken with explorers during the marine exploration of the New World. It was President Jefferson who reportedly tried macaroni while in Paris, but in reality, it could have been any type of pasta.

Italian immigrants brought pasta to the United States during the late 19th century and it quickly gained popularity. In the 1700-1850 period, pasta was a staple in Southern Italy, and there are currently around 600 different pasta shapes around the world. Spaghetti is the most popular noodle in the US.
