National Sacher Torte Day

National Sacher-Torte Day is on December 5 in the United States and celebrates the famous Austrian chocolate cake beloved around the world. Though many countries have their own versions, the original Sacher-Torte remains a culinary icon.

History

This masterpiece dates to 1832, when Austrian statesman Klemens Wenzel Lothar von Metternich asked his pastry chefs for a novel dessert. When the head chef fell ill, the task fell to the young Franz Sacher, who created a rich chocolate cake layered with apricot jam. Though Metternich’s guests enjoyed it, the recipe faded into obscurity until Franz’s son, Eduard Sacher, revived it in 1848 at Vienna’s Demel confectionery. Eduard later opened the Hotel Sacher, which still serves the authentic cake today.

• Eduard Sacher founded the Hotel Sacher in 1876; it remains one of Vienna’s most prestigious hotels.
• Legal battles over the Sacher recipe led Eduard to sell the rights in 1934 when the family faced bankruptcy.
• The Hotel Sacher produces over 300,000 portions of Sacher-Torte each year.
