History

This masterpiece dates to 1832, when Austrian statesman Klemens Wenzel Lothar von Metternich asked his pastry chefs for a novel dessert. When the head chef fell ill, the task fell to the young Franz Sacher, who created a rich chocolate cake layered with apricot jam. Though Metternich’s guests enjoyed it, the recipe faded into obscurity until Franz’s son, Eduard Sacher, revived it in 1848 at Vienna’s Demel confectionery. Eduard later opened the Hotel Sacher, which still serves the authentic cake today.
