The origins of fried clams trace back to Essex, Massachusetts, in 1914, when Lawrence Henry and his wife, Bessie, opened a small kiosk selling produce on weekends. Their offerings included homemade potato chips and fresh shellfish caught by Lawrence himself. However, the business struggled until July 3, 1916, when a fisherman named Tarr jokingly suggested frying clams to boost sales.
At the time, the idea of frying clams was unheard of, and onlookers doubted it would work because clams have shells. Despite skepticism, Lawrence and Bessie fried a few shelled clams. On July 4, after the local parade, they began selling fried clams, and customers loved them. Even Howard Johnson, founder of a restaurant chain, visited Essex to try this innovative dish. More than 100 years later, Woodman’s of Essex continues to serve fried clams, keeping the tradition alive.
